Experiments with the Follow Your Heart Vegan Egg

If you follow me on instagram, you might have seen that I got some the Follow Your Heart vegan egg to try out and try it out I did! I spent a day in the kitchen trying out some recipes, to see how well this egg replacer functions.

I am going to say upfront, I'm excited about it! It is brilliant to just scramble up to have on toast, for breakfast. With ketchup of course....


But I also made:

Veggie frittatas (so good!)

'Duck & Egg' Fried Rice

And a bakewell tart. This wasn't a 100% success but it was suuuuuper tasty!

My FYH Vegan Eggsperiments (hehe) Video


The bakewell tart recipe I used was a Mary Berry recipe, via the BBC site. I replaced the butter with vegan margarine/shortening and the egg with 60ml/quarter cup of made up FYH egg. (It's about half of one 'egg' measurement on the box!)

Frittatas:
1 tsp olive oil
1 small red onion, finely diced
1/2 a red pepper, finely diced
1 clove of garlic
1/4 tsp salt
1/8 tsp pepper
1/2 tspthyme
1 tsp paprika
6 tablespoons FYH vegan egg
345ml of iced water
1/4 cup vegan cream or non dairy milk 
1/4 cup nutritional yeast flakes
1/4 cup FYH vegan cheddar or other vegan cheese, grated

See the above video for the method. These took 30 minutes at 180°C / 350°F
'Duck & Egg' Fried Rice
1 tin of mock duck, chopped into bite sized pieces and browned in olive oil
3/4 cup of peas, defrosted
1 scrambled up FYH egg (2 tbsps made up as per box instructions)
1 pack of brown or white cooked basmati (250g cooked rice)
Chinese 5 spice powder to taste
Soy Sauce to taste

  4. I have been lucky enough to get my hands on some here in Australia thanks to care packages. I really enjoyed reading and watching your review of it. So far I have only used it once to scramble it up, but I am very keen to try making other things with it.
    I really liked your idea of putting it in fried rice, that is definitely something I will be doing.
