So earlier in the day I roasted up some cherry tomatoes, half a courgette, a couple of shallots, a clove of garlic and a yellow pepper. Then I processed it with a tbsp of tomato puree until it was still a bit chunky and mixed it with some of the pasta water and salt & pepper before mixing in the pasta. I used Doves Farm's gluten free brown rice pasta which is really delicious. MUCH nicer than any other gluten free pasta I've tried.

ReplyDeleteyour roasted veggie pasta looks great, Sal! usually we just roast up the diced veggies and toss them in the pasta, i can't believe i never thought to blend them together a bit. such a delicious idea - and huzzah for some tasty glute-free pasta. after trying different types we finally found one we love the most, too. w00t!

ReplyDeleteI really must try roasting vegetables before making them into a sauce. I usually have them as they come out of the roasting tin, in wraps, but this sounds so good!
