"Quick, easy & Delicious"
When I have to cook something that falls into this category, it's generally going to be a curry.
I usually wing it by frying some onions and garlic, chopping up whatever veg are in the fridge and throwing them in, adding some curry paste and veg stock, adding a tin of chickpeas and letting it cook for 20 minutes or so (depending on what veggies are in it). Then at the end I add some coconut yogurt or coconut cream (or just plain yogurt if that's what I have) and it's done.
This one is one I was trying to make look all fancy for ma man! It was kind of a dahl that I threw together and served over baked slices of aubergine and sweet potato.
Here are some rough instructions for how I did this:
Chop a small onion and fry in a bit of oil or cooking spray. Add spices (you can use pre mixed curry powder but i used:
1/2 tsp whole cumin seeds
1/2 tsp paprika
Pinch cinnamon
1tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
As many chilli flakes as you like or a fresh one
Then let it toast a bit and add a couple of minced cloves of garlic. Add more oil or cooking spray if needed.
Add
about 2 cups of hot water, a cup of chopped tomatoes and 1/2 - 3/4 cup of red lentils. Bring to boil, season (I added 2 veggie
oxo cubes) and simmer for about half an hour. Adding more water if
needed and stirring often.
Once cooked, add in some fresh coriander (small handful).
I
served it with brown rice and some slices of sweet potato &
aubergine that I sprayed lightly with oil and baked at 200°C for about 40 mins.
