So a couple of weeks ago, one of my dad's friends gave us this marrow and this bitch is HUGE! I mean come on, look at this beast.
So when life gives you fucking huge marrows, whaddya do? Make muffins of course.
So I made some corn muffins and they're pretty nice. So the recipe is below the pic, for anyone who finds themselves with an abundance of marrow (or you could just use courgette/zucchini).
Corn & Marrow Muffins (Makes 6)
Ingredients:
1 cup grated marrow (ish, once I squeezed out the water I had just under a cup of marrow)
1/2 cup sweetcorn (1/2 a small tin)
Dry
1/2 cup flour
1/2 cup medium cornmeal
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp paprika
1/8 tsp cayenne pepper (optional)
Wet
1/2 cup unsweetened soymilk
1/2 tsp cider vinegar
1 tbsp maple syrup/agave
2 tbsp olive or rapeseed oil
Method
Preheat oven to 180C/350F and spray a muffin tin with oil spray.
Mix dry ingredients together. Squeeze most of the water out of the marrow and add with the sweetcorn to the dry mix. Mix wet ingredients and pour into dry and mix well.
Divide between six greased muffin tins and bake for 20 minutes. Remove from oven and leave to cool for a few minutes before transferring to a wire rack.
